Taking Comfort in Cassoulet

Cassoulet - the final dish

Cooking seemed like the only thing I could do to console myself this weekend. As the rain softly falls, we are warm inside, taking comfort in Cassoulet.


Kate Hill's recipe is by far the best I've ever had. Or made.

If we lived in your area, my husband would be right over. Cassoulet has always been his favorite French dish :-) I am not too fond of it (sacrilège, I know, for a Toulousaine,) but I am very impressed that you made it yourself. Cassoulet is perhaps my favourite, and I'm always looking for the best in the GDA (Greater Daglan Area, for those not in the know). For some time, I thought the best was served at La Rapière in Sarlat. But believe it or not, I now think that the best is served in the café at a real "tourist attraction" -- Château des Milandes, Josephine Baker's former home. But I ask the chef to hold the chopped garlic he puts on top...

I will put the recipe away until it is winter in Australia...cassoulet and 40 degrees are not compatible!!

I was determined to make it at home. It took all day and the house reeked of duck fat for the next week, but it was divine. Chances are I won't make it again but Petit Robert Bistro has put it back on the menu for winter so I think I must return there.

You have all my sympathy. It was 2 weeks today that we had to put our much-cherished tuxedo cat Mats to sleep after his kidneys failed. Just typing this gets me tearing up.

I found putting together an online album of goofy pet pics got my husband and I to focus on the happy memories instead of the final days.

Enjoy the cassoulet and a nice dark strong red. And be gentle on yourselves.

It does a bit more bearable with each day - albeit slowly.
