I wish I could claim credit for this scrumptious creation. But I can't. I have to give it to a friend of mine.
A simple combination of
horseradish cream cheese spread on thinly sliced rounds of
toasted baguette and topped with slices of
roasted beets. Sprinkle a bit of salt and freshly ground black pepper over the top and voilà - perfect
apéro hour nibbles!

My boys have loved cheese and beetroot sandwiches for years. when they used to come home hungry, that was what they reached for!!
It's interesting that you haven't gotten any "ooh, beets, disgusting!" comments. Americans often don't eat beets. Personally, I love them.

The only beets we had when I was young were canned, and I hated them! Now I love the roasted variety, but still not the canned!
