Photo du Jour - Winter Savory


La sarriette, growing in our garden.

Winter savory is an aromatic perennial herb with a peppery, robust flavor. Some prefer its bold flavor to that of its softer flavored cousin, summer savory.
Add to creamy white beans or simmering lentils (it has properties that prevent flatulence), mix with roasted root vegetables or pair with braised pork and roasted chicken.

In Provence there is an amazing tasting sarriette infused goat's cheese called Chèvre à la Sarriette de Provence. Pin It

The winter savory is the only thing doing well in my herb garden this summer... Nothing to do with the fact that I'm leaving, I'm sure! I am going to miss it - and the rosemary, this winter!

We've sold our garden (it wasn't attached to the house) and before we sign the final papers this month the sarriette and lemon thyme that I planted are coming with me to live the rest of their days on a windowsill. I hope they will enjoy their new home.
When are you moving?

Now that is one herb I could do with..especially for my husband, who suffers quite a lot, with beans, greens, onions etc.:-) :-)

You should be able to find it. I'm sure it is available dried if you can't find a little plant.

I found Sarriette growing wild by the river Herault at Canet - it seems to like the stony soil at the edge of the flood plane. I would describe it as between thyme and oregano and find it works well on pizza. The French say it goes well with rabbit. Add it to cooked dishes towards the end to preserve its flavour.
