Smoked Salmon in Endive Leaves

Smoked Salmon in Endive Leaves

My second simple nibbles and snacks recipe comes from Cooking Light magazine. I just don't think you can go wrong with this one.
It's both elegant and packed with flavor - and low calorie as well!

Smoked Salmon in Endive Leaves
yields 2 dozen
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon capers
  • 1 teaspoon minced onion
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon pepper
  • 4 ounces smoked salmon, chopped
  • 24 Belgian endive leaves
  • Parsley sprigs (optional)
  1. Combine first 7 ingredients in a bowl; stir well.
  2. Spoon 1½ teaspoons salmon mixture onto each endive leaf.
  3. Garnish with parsley sprigs, if desired.

I have been looking for a "healthy recipe" to serve during l'aperitif on Christmas Eve. Simply perfect. One of the perks of living in the Pacific Northwest is that fresh, or smoked salmon is readily available. Merci! ;-) Veronique (French Girl in Seattle)

How lovely, simple and delicious that looks. We always have endives around (because Bunny eats them) so I can see making this. T. and I could call it dinner now that the girls aren't around!

Oh how I miss the delicious salmon of the Pacific Northwest! Enjoy!

Betty
It is! The most time consuming part is cleaning and separating the endive leaves.
I think you'll love it!

Emm
Exactly! :)

Really, really perfect for the holidays. And love the sauce/vinagrette.

I think it is nice to have something light like this to serve, especially when surrounded by all the other decadent seasonal offerings.

Sandra
Hope you try it and love it as much as I do.

Jennifer,
I love Cooking Light and miss my subscription. This recipe looks like the perfect starter for our Christmas dinner. Any good foie gras ideas?

nice. i often do an endive that has bleu & carmelized walnuts in it, that's very popular. but i think it's time for a new twist to my endive based snacks. will give this one a try for the holidays!

I loved Cooking Light too and have one of their cookbooks, which is great. Hope you enjoy this recipe!
I never cook foie gras, just buy it ready to eat. Sorry!

Forest
That sounds delicious! I'll be trying your version too. Thanks!
