Actual, raw beets! Beets are usually sold pre-cooked in France. You'll find a crimson stained wooden crate full of wrinkly dark purple-black orbs that are ready to peel and eat.

I must admit I've never bought raw beets anywhere, France or the USA. They always look a little complicated to deal with. Nice market pictures lately - -where do you go to the market?
I love them cut up and tossed with a vinaigrette or roasted and mixed with crumbly goat cheese. They have a wonderful flavor!
Olonzac is the market I go to most often. Only 5 minutes down the road. Carcassonne has a great one on Saturday mornings, but it's a 35 minute drive. Do you live in the center of Rodez?
Yum, beets! I was once served raw beets, shredded (grated) and dressed with a vinaigrette. They were delicious that way and I would never have thought of it.
There is a vendor at the market in Saint-Aignan who has recently had raw beets for sale.
We used to buy raw beets in San Francisco and cook them ourselves. One way is to boil them. Another is to wrap them in foil and roast them in the oven.
Soon I want to make borscht. I guess I should buy raw beets at the Saturday-morning market for that.

I love them roasted! They get that sweet, caramelized flavor that is so wonderful.
I've never tasted borscht...maybe I should try it sometime.
