Photo du Jour - Aged Gouda

42 month old Gouda

A wedge of Gouda, slowly aged for 42 months. Rich flavors of sweet and salty, which could best be described as resembling butterscotch. Or smoky caramel.
The texture first crumbles, then melts in your mouth.

I know it's not French, but I don't mind cheating from time to time.
Especially with something this sublime.

Oh, YUM! This is one of my favorite cheeses. Love the caramel flavors combined with deep saltiness and crumbly texture. I might have to buy a chunk myself today!

Sublime indeed! (And yes the photo is showing)

you must try extra old mimolette, c'est tellement bon, et dans le même registre.

This really does look like it would melt in the mouth. Where did you buy a gouda aged that long?

It does!
I found it at the new Fromagerie in Bayeux. I might become one of their most frequent customers!

Wow! This is a very Dutch highlight!! And I'm so happy I have it for breakfast almost every morning, as I live in the Netherlands and the market is just across the street...

In France, last Christmas I found Mimilette, it's of the same familty; bright oragne color and nearly-old-Gouda flavor.

Anne
Did you get some?

Definitely better than Speculous! Try it and you'll see...

Lucky you! I would happily eat this every day!
I've had mimolette, which is also delicious.
