I wonder how different this cheese is from the fromage de Banon, which is fresh goat cheese wrapped in chestnut leaves. It is one of our favorite cheeses made in Provence.

The flavor is very different.
Banon is much stronger and has a more pronounced, earthy, heady flavor. Mothais is often served much younger and is aged in caves with high humidity, keeping it moist, but not runny like Banon often is.
I love Banon too!
