La Fête du Fromage - La Clochette

The cheeses that I discover for my French cheese tasting project, now in its fourth year, never cease to amaze me. There seems to be an endless array of alluring shapes and sizes to delight the consumer, and my most recent find is definitely proof of that.

Voilà La Clochette - "the little bell."

If I had to describe this charming fromage de chèvre in one word it would be feminine. Everything about her it is ladylike, from its curvy shape to its snowy white pâte to its velvety soft texture.
It even comes wrapped in a label reminiscent of the sash that a beauty pageant contestant would wear.

La Clochette's flavor is a wonderful mélange of mellow cream, salt, sweet grasses and a hint of that distinctive chèvre flavor. It has a rich, dense mouthfeel and a flavor that lingers and lingers. Delicious!
It is produced in the Poitou-Charentes region, aged for 2-4 weeks and should be enjoyed before it turns 45 days old.

This cheese is perfect when paired with a light red wine from or a Sauvignon Blanc from the Loire Valley.
